These Juicy Homemade Turkey Burgers are packed with flavor and stay incredibly moist thanks to a simple mix of mayonnaise and grainy mustard.

- 1 pound ground turkey breast
- 1 heaping tablespoon mayonnaise
- 2 teaspoons grainy mustard
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons chopped fresh parsley
- 6 – 8 slices provolone cheese
- 2 ounces baby arugula
- 1 sliced avocado, optional
- 3 – 4 sesame seed hamburger buns (toasted on the inside with butter or mayo), if using
For the Garlic Lemon Mayo:
- 1/2 cup mayonnaise
- 1 garlic clove, grated
- juice and zest of 1/2 lemon
- Pinch of salt and pepper
Instructions
- Combine the ingredients for the garlic lemon mayo in a small bowl. Reserve in fridge.
- In a large bowl, combine the ground turkey, mayonnaise, grainy mustard, salt, garlic powder, onion powder, paprika, pepper, crushed red pepper flakes and fresh chopped parsley.
- Mix gently until everything is just combined. Don’t overwork it.
- Form into 3 to 4 even patties, slightly larger than your buns.
- Allow to set in the fridge on a plate for about 5 to 10 minutes.
- Preheat a nonstick skillet or grill over medium heat and lightly oil the surface.
- Place the turkey patties and allow the bottom to sear slightly.
- Cover and cook for 4–5 minutes per side, or until internal temperature reaches 165°F (74°C).
- Let rest while you prepare the buns.
- Toast the buns using butter or mayo.
- Slather the inside of the toasted buns with the garlic lemon mayo.
- Top with the turkey burger and fresh arugula. Optionally, top with sliced avocado.
- Place the top bun and serve immediately.

- Don’t overmix the turkey mixture—just combine until everything is incorporated to avoid dense burgers.
- Use a meat thermometer to ensure internal temp reaches 165°F (74°C).
- Chill patties for 10–15 minutes before cooking to help them hold their shape (optional, but helpful).
- Cook in a nonstick or cast iron skillet for a golden crust and even cooking.
- Cover the burgers with a lid to ensure they cook through.
- Let burgers rest for a few minutes before serving to retain juiciness.
- Double the batch and freeze uncooked patties between parchment for a quick meal later.
- Serve with flavored mayo.
- Great with or without cheese—mild cheeses like provolone, mozzarella or sharp cheddar work well. Use pepper jack cheese for an extra kick.
- To make dairy-free, skip the cheese and use a dairy-free mayo.
