This One-Pan Juicy Chicken Caprese recipe is not only easy to make, but guarantees juicy, tender chicken every single time!

- 2 boneless chicken breasts
- 3 tablespoons olive oil, divided
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 6 slices fresh mozzarella
- 1 cup cherry tomatoes, halved
- 10–12 fresh basil leaves
- 1 teaspoon cracked black pepper, plus more for garnish
- 2 teaspoons balsamic glaze
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with a paper towel. Season both sides with half of the salt, pepper, garlic powder and onion powder.
- Heat a tablespoon of olive oil in a cast iron, or oven-safe pan over medium-high heat.
- Once hot, add the chicken breasts and let them sear without touching for exactly five minutes.
- Flip the chicken breasts and immediately transfer the pan to the preheated oven. Bake for exactly 12 minutes.
- While the chicken is baking, prepare the tomato mixture. In a bowl, combine the cherry tomatoes, remaining olive oil, remaining salt, cracked black pepper and about 8 torn basil leaves. Stir to coat everything evenly.
- Remove the chicken from the oven and switch the oven setting to broil.
- Lay the fresh mozzarella slices over the chicken breasts and return to the oven. Broil on the middle rack until the cheese is melted.
- Once done, transfer the chicken to a serving platter. Spoon the tomato mixture over the chicken.
- Drizzle with balsamic glaze.
- Garnish with the remaining fresh basil leaves and cracked black pepper.

Notes
- Do follow the technique to make juicy chicken (you will not regret it).
- A cast iron pan works best in this recipe. However, you can use an oven-safe pan if that is all you have.
- Sear the chicken in a cast iron pan for exactly 5 minutes, without touching. Flip then immediately transfer to the oven for exactly 12 minutes.
- Set a timer, to be exact with the searing and baking time.
- Lay the fresh mozzarella slices on paper towels to draw out any excess moisture.
