- 2 trout, filets
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon clarified butter (ghee), or a high-smoke point oil
- 5 tablespoons butter
- 1/4 cup sliced almonds
- 2 tablespoons non-pareil capers, rinsed and drained (optional)
- 3 tablespoons fresh chopped parsley
- 2 tablespoons fresh lemon juice, plus
Instructions
- Rinse the trout and pat dry.
- Season with a pinch of salt.
- On a plate, mix together the flour, salt, black pepper and paprika.
- Dredge the trout in the flour mixture on both sides. Patting down to coat.
- Heat the clarified butter in a pan to medium and shimmering.
- Place the fish, skin side down. Allow the fish to pan fry until the edges of the fish turn brown (about 3-4 minutes).
- Do NOT overcrowd the pan. Sear the fish in batches.
- Flip and sear for another minute, or two.
- Place the fish (skin side up) on a warmed platter and keep warm in a low-temperature oven.
- Clean the pan.
- Add in the butter and melt until bubbly.
- Add in the sliced almonds. Stir frequently. Cook until the almonds are toasty and the butter is a golden brown (keep an eye as the almonds can burn quickly).
- Lower the heat.
- Add in the capers, fresh parsley and lemon juice.
- Remove from heat. Stir. Add more lemon juice, if needed.
- Taste for salt.
- Spoon the sauce over the fish.
- Serve immediately.

- use fresh trout filets or whole trout, if possible
- flounder, cod or sole are great substitutions for trout
- prep all of the ingredients first as this recipe comes together quickly
- avoid overcooking the fish
- keep a careful watch on the almonds when browning to prevent them from burning
