Description

This Creamy Sausage Potato Soup recipe is a testament to the joy of easy home cooking. Perfect for busy weeknights or lazy weekends, this soup brings together basic ingredients like sausage, potatoes and spinach, transforming them into a luscious, comforting delight.


Ingredients

  • 1 pound hot sausage links removed from casing
  • 1 tablespoon olive oil
  • 1/4 white onion, minced
  • 1 carrot, minced
  • 1 stalk celery, minced
  • 4 garlic cloves, minced
  • 1 1/2 pound white or Yukon gold potatoes, small dice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons flour
  • 115-ounce can diced tomatoes
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 4 cups chicken stock
  • 3/4 cup heavy whipping cream
  • 1/2 cup freshly grated Parmesan cheese, plus more for garnish
  • 2 cups fresh baby spinach

Instructions

  • Heat the oil in a soup pot.
  • Remove the sausage from the casing and add to the pot.
  • Break the sausage apart while it’s browning. This meat chopper is one of my favorite kitchen gadgets.
  • Once the sausage is almost fully-cooked and browned, add in the carrots, onions, celery and garlic.
  • Cook for about 5 minutes to soften.
  • Add in the potatoes. Season with salt and pepper.
  • Stir to coat the potatoes with the fat from the sausage. Cook for another 2 minutes.
  • Dust the vegetables and sausage with flour. Mix to coat. Cook off the raw flour taste for a few minutes.
  • Add in the tomatoes, bay leaves, and fresh thyme. Season the tomatoes with a pinch of salt. 
  • Pour in the chicken stock. Mix. Turn up the heat almost to a boil.
  • Turn down the heat and simmer partially covered for about 20 minutes, or until the potatoes are tender.
  • Stir occasionally to ensure the potatoes are not sticking to the bottom.
  • Remove and discard the bay leaves and the woody stems of thyme.
  • Pour in the heavy whipping cream.
  • Slowly incorporate the Parmesan cheese to avoid clumping.
  • Add in the fresh spinach.
  • Cook for another five minutes.
  • Ladle into bowls garnished with freshly grated Parmesan cheese.
  • Serve and ENJOY!

  • If you are sensitive to heat, opt for a mild or sweet sausage.
  • Add a touch of crushed red pepper flakes to amp up the heat level.
  • Stir occasionally as the soup is simmering to ensure the potatoes are not sticking to the bottom. 
  • Mash a few of the potatoes to thicken the soup.
  • Slowly incorporate the Parmesan cheese to avoid clumping.
