Ingredients

Units Scale
  • 1 1/2 pounds orange roughy, or any flaky white fish
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 2 rosemary sprigs
  • 2 tablespoons fresh chopped parsley, for garnish
  • lemon wedges, for serving

For the citrus sauce:

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Juice and zest of 1 orange
  • Juice and zest of 1 lemon
  • Pinch of salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine all of the ingredients for the citrus sauce. Mix well.
  3. Season the fish filets with salt and pepper on both sides.
  4. Butter the bottom of a baking dish. Place fish in dish.
  5. Pour the citrus sauce evenly over the fish.
  6. Add rosemary sprigs.
  7. Cover and bake for 15-20 minutes, until fish is tender, flaky, and no longer opaque.
  8. Garnish with fresh chopped parsley.
  9. Serve with lemon wedges.
  10. ENJOY!

Notes

  • Use fresh citrus juice and zest for best flavor.
  • Adjust baking time based on fish thickness; thinner filets will cook faster.
  • For a milder dish, omit or reduce the crushed red pepper.
  • Great option for meal prep; serve chilled on a salad the next day.
