Scale
- 1 pound boneless skinless chicken breasts, diced
- 1 pound Brussels sprouts, trimmed and cut lengthwise into thirds
- 2 to 3 tablespoons olive oil
- 1 tablespoon paprika
- 1 tablespoon lemon pepper seasoning
- 2 teaspoons garlic powder
- 1 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- If your air fryer has a preheat function, preheat it to 380°F (193°C).
- In a small bowl, mix together the paprika, lemon pepper, garlic powder, black pepper, and salt.
- Dice the chicken into bite-sized chunks and place in a large mixing bowl.
- Trim the ends off each Brussels sprout and slice them lengthwise into thirds. Add them to the bowl with the chicken.
- Drizzle on 2 tablespoons of olive oil and sprinkle about half of the spice blend over the top. Toss to coat everything evenly.
- Add more oil or seasoning if needed, making sure everything is well-coated.
- Pour the chicken and Brussels sprout mixture into the air fryer basket in an even layer.
- Air fry at 380°F (193°C) for 12 to 14 minutes, shaking the basket a few times during cooking to ensure even browning.
- Serve hot with steamed rice or your favorite grain.
- ENJOY!
Notes
- Be sure to trim the ends off the Brussels sprouts and slice them lengthwise into thirds for even cooking and crisp edges.
- Dice the chicken evenly so it cooks through at the same rate as the sprouts.
- If your air fryer doesn’t have a preheat function, let it run empty for 2-3 minutes at 380°F (193°C) before adding the food.
- If you own a smaller air fryer, you may want to air fry in batches.
- Toss with oil and seasoning in a large bowl to ensure everything is well-coated.
- Don’t overcrowd the air fryer basket—spread everything in an even layer for the best browning.
- Shake the basket a couple of times during cooking to help the sprouts crisp and the chicken brown evenly.
- You can use chicken thighs for a juicier option.
- Swap Brussels sprouts for cabbage or broccoli if preferred.
- Serve with a side of steamed rice, or skip for a low-carb/keto-friendly meal.
- Great with sauces like yum yum sauce, spicy mayo, or sweet chili sauce.
