Description

These easy-to-make Blackened Salmon Lettuce Wraps are the perfect recipe when you are looking for a healthy and delicious meal. Bursting with flavors and packed with protein, these salmon bites wrapped in crisp greens are as pleasing to the palate as they are to the eyes. In addition, this healthier version of a salmon taco ma for a great meal prep idea.


Ingredients

Scale
  • 1 pound salmon, skinless and cut into bite-sized chunks
  • 2 tablespoons olive oil, divided
  • 4 tablespoons blackening seasoning (see recipe below)
  • 6 large lettuce leaves
  • 3 plum tomatoes, diced
  • 2 teaspoons red onion, minced
  • 1 small jalapeño, diced
  • 1 tablespoon fresh cilantro, chopped (plus more for garnish)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons lime juice
  • 1 teaspoon lime zest

For the blackening seasoning:

  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon dried oregano
  • 2 teaspoons onion powder
  • 2 teaspoons dried thyme
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 to 2 teaspoons cayenne pepper

Instructions

  1. In a small bowl, combine the tomatoes, red onion, jalapeño, fresh cilantro, salt, pepper, lime zest, lime juice and 1/2 tablespoon olive oil. Mix well and set in fridge while we prepare the salmon.
  2. Add the salmon chunks to a bowl with 1/2 tablespoon of olive oil. Gently toss to coat the salmon. Sprinkle on the blackening season. Coat each salmon bite in the seasoning blend.
  3. Heat a cast iron pan to medium-high. When hot, add the remaining tablespoon of olive oil and move around to fully coat the bottom of the pan. 
  4. Once the oil is hot (smoking), add the salmon chunks to the pan. Allow them to blacken and crisp up on one side prior to flipping. 
  5. Gently flip and sear the remaining sides. Remove from pan. 
  6. Arrange lettuce leaves on a platter. 
  7. Fill each lettuce leaf with 4 to 5 pieces of blackened salmon. 
  8. Top each with a spoonful of fresh salsa.
  9. Additionally, garnish with your favorite sauce. (See post for suggestions)

Notes

  • choose quality salmon
  • ensure each salmon chunk is coated with the seasoning
  • use fresh toppings (crisp lettuce, ripe tomatoes, fresh cilantro, etc.)
  • coat heated cast iron pan with olive oil prior to blackening the salmon (the oil will act as a barrier to ensure the salmon won’t stick to the pan)
  • blacken salmon in batches if you need to (do NOT overcrowd the pan)
  • do NOT overcook the salmon (the bites will take less than 3 minutes to sear)
