Description

This Banana Nut Bread is soft, moist, and full of banana flavor. A classic homemade banana bread made from scratch with chopped walnuts.


Ingredients

  • 3 overripe bananas, mashed
  • 1/2 cup salted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, beaten
  • 1/2 cup sour cream
  • 3/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 to 3/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a standard loaf pan.
  2. In a large bowl, cream together the softened butter and sugar until smooth.
  3. Mix in the beaten eggs, mashed bananas, sour cream, and vanilla, until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, cake flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use very ripe bananas with plenty of brown spots for best flavor.
  • Avoid overmixing to keep the bread tender.
  • Begin checking for doneness at the 45-50 minute mark.
