Description
This Baked Cod with Brown Butter elevates an everyday fish dish with the nutty, rich flavor of browned butter.

- 2–3 pounds cod
- 1 large russet potato
- 1 1/2 tablespoons olive oil, divided
- 1 tablespoon paprika
- 1 teaspoon salt, divided
- 1 teaspoon black pepper, divided
- 1/2 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 cup cherry tomatoes
- 5 fresh torn basil leaves
- 2 tablespoons fresh chopped parsley
- 1 stick butter (for Brown Butter)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel the potato and slice very thin on a mandoline.
- Soak the potato slices in salted water for a few minutes. Drain and rinse.
- Pat the potato slices completely dry.
- In a bowl, combine the paprika, 1/2 teaspoon salt, 1/2 teaspoon black pepper, garlic powder, and onion powder.
- Pat the fish dry and season with the seasoning blend.
- Line a baking sheet with parchment paper.
- Lay out the potato slices, slightly overlapping, to create a bed large enough for the fish.
- Coat the potatoes with a little olive oil, and season with salt and pepper.
- Lay the fish on the center of the potatoes and scatter the cherry tomatoes.
- Drizzle the tomatoes with a touch of olive oil and a pinch of salt.
- Bake for 30-35 minutes, depending on the thickness of the fish.
- With about 10 minutes left of baking, prepare the Brown Butter.
- When the fish is fully-cooked and starts to flake, remove it from the oven.
- Spoon a touch of the brown butter over the fish.
- Garnish with most of the fresh basil and parsley.
- Cut individual servings to plate.
- Add a bit more brown butter to each serving and garnish with more fresh herbs.

Notes
- Use fresh cod, if possible. If using frozen, be sure to thaw properly in the fridge.
- Use large filets, or cut into individual servings prior to baking.
- Pat the fish dry to help the seasoning stick better.
- Use a mandoline to get uniformly thin slices of potatoes, which cook evenly and create a nice base for the fish.
- Season generously for both the fish and the potatoes to enhance the overall taste.
- When making brown butter, keep an eye on it and stir frequently to prevent burning.
- Baking time will vary depending on the thickness of the fish, so keep an eye on it to avoid overcooking.
- You can also substitute cod with your favorite white fish or salmon.
