Description

This Baked Cod with Brown Butter elevates an everyday fish dish with the nutty, rich flavor of browned butter.


Ingredients

  • 23 pounds cod
  • 1 large russet potato
  • 1 1/2 tablespoons olive oil, divided
  • 1 tablespoon paprika
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup cherry tomatoes
  • 5 fresh torn basil leaves
  • 2 tablespoons fresh chopped parsley
  • 1 stick butter (for Brown Butter)

 


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel the potato and slice very thin on a mandoline.
  3. Soak the potato slices in salted water for a few minutes. Drain and rinse.
  4. Pat the potato slices completely dry.
  5. In a bowl, combine the paprika, 1/2 teaspoon salt, 1/2 teaspoon black pepper, garlic powder, and onion powder.
  6. Pat the fish dry and season with the seasoning blend.
  7. Line a baking sheet with parchment paper.
  8. Lay out the potato slices, slightly overlapping, to create a bed large enough for the fish.
  9. Coat the potatoes with a little olive oil, and season with salt and pepper.
  10. Lay the fish on the center of the potatoes and scatter the cherry tomatoes.
  11. Drizzle the tomatoes with a touch of olive oil and a pinch of salt.
  12. Bake for 30-35 minutes, depending on the thickness of the fish.
  13. With about 10 minutes left of baking, prepare the Brown Butter.
  14. When the fish is fully-cooked and starts to flake, remove it from the oven.
  15. Spoon a touch of the brown butter over the fish.
  16. Garnish with most of the fresh basil and parsley.
  17. Cut individual servings to plate.
  18. Add a bit more brown butter to each serving and garnish with more fresh herbs.

Notes

  • Use fresh cod, if possible. If using frozen, be sure to thaw properly in the fridge.
  • Use large filets, or cut into individual servings prior to baking.
  • Pat the fish dry to help the seasoning stick better.
  • Use a mandoline to get uniformly thin slices of potatoes, which cook evenly and create a nice base for the fish.
  • Season generously for both the fish and the potatoes to enhance the overall taste.
  • When making brown butter, keep an eye on it and stir frequently to prevent burning.
  • Baking time will vary depending on the thickness of the fish, so keep an eye on it to avoid overcooking.
  • You can also substitute cod with your favorite white fish or salmon.
