This Air Fryer Chicken and Tomatoes is one quick, easy and healthy recipe that can be served for lunch, dinner or for meal prep.

- 2 boneless chicken breasts, diced into bite-sized pieces
- 1 1/2 cups cherry tomatoes
- 1 cup steamed rice (optional)
- 1 1/2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh chopped parsley, for garnish
- Cracked black pepper, for garnish
Instructions
- Preheat the air fryer to 400°F (200°C) for five minutes.
- Add diced chicken to a bowl. Sprinkle on paprika, garlic powder, onion powder, salt, and pepper.
- Add cherry tomatoes and olive oil to the bowl. Toss to coat everything evenly.
- Pour the contents of the bowl into the air fryer basket.
- Air fry at 400°F (200°C) for 10-12 minutes, shaking the basket a few times during cooking.
- Once the chicken is fully cooked and the tomatoes are blistered, pour everything into a bowl, including the juices.
- Garnish with fresh parsley and cracked black pepper.
- Optionally, serve over steamed rice.

Notes
- Easily substitute boneless chicken breasts with boneless chicken thighs.
- Be sure to preheat the air fryer.
- Use your favorite seasoning blend.
- Shake the air fryer basket at least once to ensure the chicken and tomatoes are cooking evenly.
