Description

This Air Fryer Chicken and Tomatoes is one quick, easy and healthy recipe that can be served for lunch, dinner or for meal prep.


Ingredients

  • 2 boneless chicken breasts, diced into bite-sized pieces
  • 1 1/2 cups cherry tomatoes
  • 1 cup steamed rice (optional)
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh chopped parsley, for garnish
  • Cracked black pepper, for garnish

Instructions

  1. Preheat the air fryer to 400°F (200°C) for five minutes.
  2. Add diced chicken to a bowl. Sprinkle on paprika, garlic powder, onion powder, salt, and pepper.
  3. Add cherry tomatoes and olive oil to the bowl. Toss to coat everything evenly.
  4. Pour the contents of the bowl into the air fryer basket.
  5. Air fry at 400°F (200°C) for 10-12 minutes, shaking the basket a few times during cooking.
  6. Once the chicken is fully cooked and the tomatoes are blistered, pour everything into a bowl, including the juices.
  7. Garnish with fresh parsley and cracked black pepper.
  8. Optionally, serve over steamed rice.
