This is The Best Potato Salad recipe! It’s rich, tangy, and packed with flavor in every bite. It’s the perfect side dish that can be enjoyed all year-long.


Ingredients

  • 3 medium russet potatoes, peeled and cut into a tiny dice
  • 1 stalk celery, minced
  • 2 tablespoons red onion, minced
  • 2 hard boiled eggs, diced
  • 1 1/4 cups Miracle Whip, plus more as needed
  • 2 tablespoons sour cream
  • 1 tablespoon sweet relish
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chopped parsley, plus more for garnish

Instructions

  1. Peel and cut the potatoes into a small dice. Place in a pot of cold, salted water.
  2. Bring to a gentle boil and cook until the potatoes are tender but not falling apart.
  3. While the potatoes cook, prepare the hard boiled eggs. Tiny dice the celery and red onion, then place them on paper towels to absorb moisture.
  4. Drain the potatoes and spread them on paper towels to cool and dry.
  5. Dice the hard boiled eggs.
  6. In a large bowl, combine Miracle Whip, sour cream, celery, red onion, relish, eggs, parsley, and black pepper. Stir until well combined.
  7. Once the potatoes are cool, gently fold them into the mixture.
  8. Add more Miracle Whip or sour cream if needed.
  9. Taste and adjust the salt.
  10. Chill before serving. Garnish with extra chopped parsley.
