Description

Miller’s Sweet and Spicy Banana Pepper Sauce is a game changer for weeknight dinners! This quick, easy, and healthy Sweet and Spicy Coconut Salmon is packed with bold flavors and comes together in under twenty minutes.

Ingredients

Scale
  • 2, 6-7 ounce salmon filets, skin-off
  • 1/3 cup + 2 tablespoons Miller’s Sweet and Spicy Banana Pepper Hot Sauce
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can coconut milk with cream
  • 1 1/2 teaspoons low-sodium soy sauce
  • 2 tablespoons fresh cilantro, chopped, plus more for garnish
  • Juice of 1/2 lime
  • Lime wedges, for serving
  • Steamed rice, for serving
  • Steamed vegetables, for serving

Instructions

  1. Brush the salmon filets with two tablespoons of Miller’s Sweet and Spicy Banana Pepper Hot Sauce. Season with salt and pepper.
  2. Air fry the salmon at 400°F (200°C) for 9-10 minutes. Alternatively, bake at 400°F (200°C) for 12-15 minutes.
  3. While the salmon is cooking, heat a sauté pan to medium. Add the remaining Miller’s Sweet and Spicy Banana Pepper Hot Sauce and stir, allowing it to slightly caramelize.
  4. Pour in the coconut milk and add the soy sauce. Mix well and simmer for 3-4 minutes. Turn off the heat.
  5. Stir in the fresh cilantro and lime juice. Adjust with extra lime juice, if desired.
  6. Place steamed rice in a bowl with the steamed vegetables. Top with the salmon and spoon on the sweet and spicy coconut sauce.
  7. Garnish with chopped cilantro and lime wedges.
  8. Serve immediately.
  9. ENJOY!

Notes

  • If steaming rice, start this first. Microwavable rice is a great, quick and easy alternative.
  • Easily steam the vegetables while the salmon is cooking.
  • If you do not own an air fryer, bake the salmon on a baking sheet at 400°F (200°C) for 12-14 minutes.
  • Try not to burn the banana pepper sauce as it’s caramelizing (you just need a minute or two).
  • Do not over cook the sauce. Once the coconut milk and soy sauce are added, simmer for only 2-3 minutes.
  • Don’t forget the squeeze of fresh lime juice.
  • Easily replace the cilantro with parsley or Thai basil.
  • This recipe will yield enough sauce for four salmon filets.
