This Savory Cowboy Butter is the perfect condiment to take your steak, chicken, seafood, or even vegetables to the next level.


Ingredients

  • 1 stick butter, salted or unsalted
  • 3 garlic cloves, minced
  • 2 teaspoons Aleppo pepper
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 heaping tablespoon whole grain mustard
  • Zest and juice of one lemon
  • 1 teaspoon chopped chives
  • 2 tablespoons fresh chopped parsley

Instructions

  1. Start by melting the butter in a pot over medium-low heat.
  2. As the butter melts, add in the minced garlic, Aleppo pepper, paprika, black pepper, salt, and crushed red pepper flakes.
  3. Once the butter is fully melted, cook the mixture for a few minutes to soften the flavors.
  4. Whisk in the whole grain mustard, lemon zest, and lemon juice. Continue cooking for another 1-2 minutes.
  5. Remove the pot from heat and stir in the fresh chives and parsley.
  6. Serve the cowboy butter immediately, or store it for later use.

  • This Savory Cowboy Butter is perfect for steaks, seafood, chicken, vegetables, or even spreading on bread.
  • I used salted butter, but you can substitute with unsalted.
  • Maintain the heat at a medium-low to avoid browning or burning the butter and garlic.
  • To maintain freshness, stir the fresh herbs into the butter off of the heat. 
  • You can customize the recipe by adjusting the lemon zest and juice to your taste, especially if you prefer a milder lemon flavor.
  • Feel free to swap out whole grain mustard for Dijon or yellow mustard, and use dried herbs like parsley and chives if you don’t have fresh.
  • If you want more spice, add extra Aleppo pepper or crushed red pepper flakes.
  • Store leftover cowboy butter in the fridge for up to a week or freeze it in ice cube trays for easy use up to 3 months.
  • For a dairy-free version, substitute ghee for the butter.
