Description
Steamed Salmon in Parchment is one of the easiest ways to lock in flavor, and result in tender, flaky salmon infused with citrus and herbs.

- 2 salmon filets (6–8 oz each), skin removed
- 1 tablespoon lemon pepper seasoning
- 6 lemon slices (3 per filet)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cannellini beans, rinsed and drained
- 4 sprigs fresh thyme (2 per packet)
- 1/4 cup white wine (divided)
- Pinch of salt
- Drizzle of olive oil (for serving)
- 2 tablespoons fresh chopped parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the salmon filets dry and season both sides with lemon pepper.
- Cut two large sheets of parchment paper. In the center of each, layer 3 lemon slices.
- Place one salmon filet on top of each lemon bed.
- Top each filet with half of the cherry tomatoes, a pinch of salt, and half of the cannellini beans.
- Add two sprigs of fresh thyme to each packet, then pour two tablespoons of white wine over each.
- Fold the top of the parchment over the salmon and fold in the edges tightly to form a sealed packet.
- Place both parchment packets on a baking sheet and bake for 20–25 minutes.
- Transfer each parchment packet to a shallow bowl or dish. Carefully open to release the steam.
- Drizzle with olive oil, sprinkle with chopped parsley, and serve with lemon wedges.
- Serve alone, or with steamed rice, roasted potatoes or orzo.
