Description

Steamed Salmon in Parchment is one of the easiest ways to lock in flavor, and result in tender, flaky salmon infused with citrus and herbs.


Ingredients

  • 2 salmon filets (68 oz each), skin removed
  • 1 tablespoon lemon pepper seasoning
  • 6 lemon slices (3 per filet)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cannellini beans, rinsed and drained
  • 4 sprigs fresh thyme (2 per packet)
  • 1/4 cup white wine (divided)
  • Pinch of salt
  • Drizzle of olive oil (for serving)
  • 2 tablespoons fresh chopped parsley (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon filets dry and season both sides with lemon pepper.
  3. Cut two large sheets of parchment paper. In the center of each, layer 3 lemon slices.
  4. Place one salmon filet on top of each lemon bed.
  5. Top each filet with half of the cherry tomatoes, a pinch of salt, and half of the cannellini beans.
  6. Add two sprigs of fresh thyme to each packet, then pour two tablespoons of white wine over each.
  7. Fold the top of the parchment over the salmon and fold in the edges tightly to form a sealed packet.
  8. Place both parchment packets on a baking sheet and bake for 20–25 minutes.
  9. Transfer each parchment packet to a shallow bowl or dish. Carefully open to release the steam.
  10. Drizzle with olive oil, sprinkle with chopped parsley, and serve with lemon wedges.
  11. Serve alone, or with steamed rice, roasted potatoes or orzo.

Notes

  • Feel free to add your favorite vegetables to the packet. Just be sure they will cook thoroughly with the salmon.
  • Use your favorite seasoning blend.
  • Watch the steam: Open the parchment away from your face to avoid burns.
  • Salmon doneness: The salmon should flake easily with a fork and appear opaque throughout.
  • Customize the flavor: Try different herb blends or citrus slices like orange or lime for variety.
  • No wine? No problem: Lemon juice and orange juice add brightness and acidity, without alcohol.
