This Pan Sautéed Trigger Fish is crispy on the outside, flaky inside, and ready in just 20 minutes with a simple seasoned coating and fresh lemon.

- 4 trigger fish fillets
- ¼ cup all-purpose flour
- 2 tablespoons cornstarch (or rice flour)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon olive oil
- 1 tablespoon butter
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
- Pat the trigger fish fillets completely dry with paper towels.
- On a large plate or shallow dish, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika.
- Dredge each fillet in the flour mixture, coating both sides. Shake off any excess coating.
- Heat a large skillet over medium to medium-high heat.
- Add the olive oil and butter.
- Once the butter has melted and begins to foam, carefully place the fish into the pan.
- Cook undisturbed for 6 to 7 minutes, depending on the thickness of the fillets, until the bottom develops a deep golden-brown crust.
- Carefully flip the fish and continue cooking until the second side is browned and the fish flakes easily with a fork.
- Transfer to a serving platter and garnish with fresh parsley.
- Serve immediately with fresh lemon wedges.
