Bring a taste of Italy to your table with this Italian White Beans with Salami recipe. It’s a flavorful appetizer, that’s sure to impress.

- 2 cans cannellini beans, rinsed and drained
- 3/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 cup cherry tomatoes, diced small
- 3/4 English cucumber, diced small
- 1/3 cup red onion, diced small
- 3/4 cup salami, diced small
- 1/2 cup fresh chopped parsley
- 1/3 cup chopped fresh basil
- 1 teaspoon salt
- 2 teaspoons black pepper
- 1/2 teaspoon crushed red pepper flakes, optional
Instructions
- In a large bowl, combine all of the ingredients except for the beans. Mix well.
- Gently fold in the cannellini beans.
- Taste for salt and adjust if necessary.
- Refrigerate for at least an hour to allow the flavors to marry.
- Serve with fresh burrata or mozzarella cheese and toast points.

Notes
- Be sure to drain and rinse the beans.
- Try to dice everything, uniformly in a tiny dice.
- Use a good-quality olive oil
- Taste for salt wants everything is mixed together.
- Refrigerate for at least an hour, prior to serving to allow the flavors to marry.
- Serve with burrata or fresh mozzarella. Can also be served alone on toasty bread or toast points.
- Leftovers can be stored in the fridge for up to 3 days.
