Description
Crispy Homemade Potato Chips fried until golden and seasoned to your liking. It’s simple snack that’s surprisingly easy to prepare.
Ingredients

- 3–4 Russet potatoes, peeled and sliced paper thin
- Oil, for deep frying
- 1 teaspoon salt
- 1–2 teaspoons favorite seasoning blend (I used a Brown Sugar BBQ)
Instructions
- Peel the potatoes and use a mandoline to slice them paper thin.
- Add the sliced potatoes to a bowl of cold, lightly salted water and soak for at least 15 minutes.
- Rinse the potatoes well and lay them out in single layers on paper towels to drain excess water.
- Heat the oil in a deep pot or fryer, until hot.
- Working in batches, carefully fry the potato slices. The first batch will take about 10 minutes.
- Stir the potatoes as they fry to prevent sticking and flip as needed to brown evenly on both sides.
- Remove the chips with a slotted spoon and transfer to a bowl lined with paper towels to drain excess grease.
- Season and salt the chips while they are still warm.
- Repeat with remaining potatoes.
- Once all chips are fried, combine them in a bowl, season more if needed, toss, and serve.

Notes
- Slice the potatoes as evenly and thinly as possible for consistent frying.
- If you do not want to, you do not have to peel the potatoes, just be sure to scrub well before slicing.
- Fry in small batches to avoid lowering the oil temperature.
- Always season immediately after frying for the best flavor.
- Adjust seasoning after all chips are combined if needed.
