HOW TO MAKE CRISPY FRIED ZUCCHINI RIBBONS


Description

Take advantage of the abundance of zucchini and yellow squash anytime of the year with this recipe for Crispy Fried Zucchini Ribbons. The ribbons are super light, and so incredibly crispy. Prepare with ingredients you have in your pantry. Enjoy alone, or with your favorite dipping sauce.


Ingredients

Scale
  • 2 large, or 3 small zucchini
  • 1 1/2 cups flour
  • 1/2 cup rice flour or cornstarch
  • 2 teaspoons kosher salt, plus
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder
  • oil for frying
  • 1 tablespoon Parmesan cheese, freshly grated

Instructions

  1. Heat oil to 350° to 375°.
  2. Cut the ends off of the zucchini.
  3. Peel lengthwise using a vegetable peeler to create thin ribbons.
  4. In a wide bowl, combine the flour, rice flour, kosher salt, black pepper and garlic powder.
  5. Toss in the zucchini ribbons.
  6. Coat each strip in the flour mixture.
  7. Once the oil comes to temperature, deep fry in batches.
  8. Brown.
  9. Remove using a large slotted spoon or spider.
  10. Place the zucchini ribbons onto paper towels to drain any excess oil.
  11. Salt immediately.
  12. Plate. Sprinkle on the Parmesan cheese.
  13. Serve with your favorite dipping sauce(s).
  14. ENJOY
