Description
Late Summer, into early Fall is the season for fresh figs. Take advantage of this short window, and create this fabulous Fresh Fig Parsley Salad. The perfect combination of sweet, savory and salty. One unique way to enjoy fresh figs!
Ingredients

- 14 small fresh figs, halved
- 1 bunch parsley, chopped
- 1 stalk celery, thinly sliced
- 4 slices thick-cut bacon
- 1/4 red onion, sliced thin
- 1/2 tsp kosher salt
- 1 tsp black pepper
- 3 to 4 ounces blue or Gorgonzola cheese, torn into tiny pieces
- 1/4 C chopped walnuts
FOR THE DRESSING:
- 1/2 C olive oil
- 1/3 C golden balsamic vinegar
- 2 TBLS maple syrup
- juice of 1/2 lemon
- 1 tsp black pepper
Instructions
- Crisp the bacon. Dice.
- Rinse the fresh figs. Slice in half.
- In a large bowl, add the chopped parsley, thinly sliced celery and red onion.
- Toss in the fresh figs.
- Season with kosher salt and black pepper.
- Add in the blue cheese, chopped walnuts and crisp bacon (reserve a bit of the walnuts and bacon for garnish).
- In a small bowl, combine all of the ingredients for the dressing. Taste. Adjust as needed.
- Dress the salad.
- Garnish with the reserved bacon and walnuts.
