Have you heard? Eating lentils brings wealth and prosperity in the New Year! So, I’ve created an easy way to enjoy these protein-packed legumes that’s both hearty, and delicious. Honestly, this Easy Crockpot Lentil Soup can be enjoyed all year long. Brown the coin-shaped sausages for additional flavor and toss them into a slow cooker with the remaining ingredients. After four to five hours, dinner is done! Maybe, just maybe, lentils will become YOUR new favorite legume. This healthy, slow-cooker soup makes for the perfect weeknight meal.
Ingredients
- 1 pound brown lentils, rinsed
- 1 pound smoked sausage, cut into circles
- 2 stalks celery with leaves, minced
- 1/2 onion, minced
- 1 large carrot, minced
- 20 ounces crushed tomatoes
- 5 to 6 cups chicken or vegetable stock
- 5 sprigs thyme
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Cut the sausage into circles and brown in a pan.
- Rinse the lentils.
- Mince the carrots, celery and onion.
- Once the sausages have browned, add them to the crockpot with the remaining ingredients, including the lentils.
- Add a bit of stock to the pan you cooked the sausages to remove the brown bits. Add to the crockpot.
- Cook on high 4 to 5 hours.
- Check the liquid levels a few times. Add more stock, as needed.
- Soup is done when the lentils are tender.
- Remove and discard the bay leaves and thyme stalks.
- Serve in bowls with fresh bread for a hearty meal.
