Description

Homemade Doner Kebab Meat made easy in the oven with bold spices and thin layers. It’s perfect for pita, wraps, or meal prep.

Ingredients

Scale
  • 1 pound ground beef
  • 1 pound ground lamb
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1/2 white onion, minced
  • 2 garlic cloves, minced
  • 2 tablespoons paprika
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon dried oregano
  • Lemon juice, for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, ground lamb, Greek yogurt, olive oil, minced onion, garlic, paprika, salt, black pepper, cumin, coriander, and oregano. Mix very well until fully combined.
  3. Divide the mixture into 6 equal portions.
  4. Place one portion in the center of a piece of parchment paper and top with another piece of parchment.
  5. Use a rolling pin to spread the meat into a thin, even layer.
  6. Remove the top parchment and roll the meat (with the bottom parchment) into flat folds.
  7. Repeat with remaining portions and place on a large baking sheet (or two if needed).
  8. Bake for 25–30 minutes, draining excess grease halfway through if necessary.
  9. Remove from the oven and carefully take the meat off the parchment paper.
  10. Drizzle with fresh lemon juice before serving.
  11. ENJOY!

Notes

  • The thinner you spread the meat, the more authentic the texture.
  • Don’t skip the yogurt. It helps keep the meat tender and juicy.
  • Draining grease midway improves texture and flavor.
  • Let the meat rest slightly before removing from parchment.
