Description
Transform your farmer’s market finds into these Crispy Italian Zucchini Fritters. The perfect blend of spices, freshly grated Parmesan cheese and a touch of bread crumbs make these fritters tasty and tender on the inside and super crunchy on the outside!
Ingredients

- 2 medium zucchini, grated
- oil for a shallow fry
- 3 eggs
- 1/2 cup Parmesan cheese, freshly grated
- 1/2 cup seasoned Italian bread crumbs
- 2 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
- Grate the zucchini on a box grater.
- Squeeze out as much water as possible using any of the techniques mentioned in the post.
- Heat enough oil for a shallow fry to medium.
- Place the grated zucchini in a bowl.
- Add the remaining ingredients.
- Mix well.
- Using a spoon or scoop, place equal amounts of the fritter mixture into the heated oil.
- Flatten just a touch. (the thicker the fritter, the longer they will have to fry)
- Allow to fry on one side for at least 4 to 5 minutes.
- Flip.
- Fry for another 3 to 4 minutes.
- Remove and place on paper towels to drain any excess oil.
- Garnish with a touch of salt.
- Serve warm and ENJOY!
