Start your day, or serve for any meal, this protein-packed, Cottage Cheese Baked Eggs dish. It’s creamy, flavorful, and surprisingly versatile.


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 3/4 cup white cheddar cheese, divided
  • 1/3 cup freshly grated Parmesan cheese
  • 1/3 cup fresh baby spinach, chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 teaspoons paprika, divided
  • 1 tablespoon butter (for lining the baking dish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Blend the cottage cheese in a blender until smooth and creamy.
  3. In a separate bowl, combine the eggs with the blended cottage cheese. Season with salt, black pepper, garlic powder, and 1 teaspoon of paprika.
  4. Blend with an immersion blender or whisk until fluffy.
  5. Stir in the Parmesan cheese, 1/2 cup of the cheddar cheese, and chopped spinach.
  6. Line a 7.5″ x 6″ baking dish with the butter. Pour in the egg mixture.
  7. Top with the remaining cheddar cheese and sprinkle the remaining paprika.
  8. Bake for 35-45 minutes, or until the eggs are set and the top is lightly golden.
  9. Allow to cool slightly before slicing and serving.
