- 4 large eggs
- 1 cup cottage cheese
- 3/4 cup white cheddar cheese, divided
- 1/3 cup freshly grated Parmesan cheese
- 1/3 cup fresh baby spinach, chopped
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 teaspoons paprika, divided
- 1 tablespoon butter (for lining the baking dish)
Instructions
- Preheat the oven to 375°F (190°C).
- Blend the cottage cheese in a blender until smooth and creamy.
- In a separate bowl, combine the eggs with the blended cottage cheese. Season with salt, black pepper, garlic powder, and 1 teaspoon of paprika.
- Blend with an immersion blender or whisk until fluffy.
- Stir in the Parmesan cheese, 1/2 cup of the cheddar cheese, and chopped spinach.
- Line a 7.5″ x 6″ baking dish with the butter. Pour in the egg mixture.
- Top with the remaining cheddar cheese and sprinkle the remaining paprika.
- Bake for 35-45 minutes, or until the eggs are set and the top is lightly golden.
- Allow to cool slightly before slicing and serving.
