For the Cod:
- 1 1/2 to 2 pounds cod, cut into filets
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon paprika
For the Sauce:
- 1 pint cherry tomatoes, halved
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken or vegetable broth
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1/4 cup fresh torn basil
- 1/4 cup fresh chopped parsley
Instructions
- Combine salt, black pepper, garlic powder, onion powder and paprika in a bowl. Mix well.
- Pat the cod filets dry and season both sides with the seasoning blend. Set aside.
- Heat the olive oil for the sauce in a pan over medium heat.
- Add the garlic and crushed red pepper. Sauté for a minute, until fragrant.
- Add the cherry tomatoes. Season with salt and pepper. Cook for about 7-8 minutes, until the tomatoes are soft and jammy.
- Pour in the broth, lemon juice and lemon zest. Continue to simmer on low heat while you prepare the cod.
- In a separate pan, heat the olive oil over medium-high heat.
- Place the seasoned cod filets in the pan. Cook for about 3-4 minutes until a crust forms on the bottom.
- Gently flip the filets and cook for another few minutes, until the fish flakes easily and is fully-cooked.
- Transfer the cod to a serving platter.
- Stir fresh basil and parsley into the tomato sauce, reserving a little for garnish.
- Spoon the sauce over the cooked cod filets.
- Garnish with the remaining fresh herbs.
- Serve immediately and ENJOY!
