For the Cod:

  • 1 1/2 to 2 pounds cod, cut into filets
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika

For the Sauce:

  • 1 pint cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken or vegetable broth
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup fresh torn basil
  • 1/4 cup fresh chopped parsley

Instructions

  1. Combine salt, black pepper, garlic powder, onion powder and paprika in a bowl. Mix well.
  2. Pat the cod filets dry and season both sides with the seasoning blend. Set aside.
  3. Heat the olive oil for the sauce in a pan over medium heat.
  4. Add the garlic and crushed red pepper. Sauté for a minute, until fragrant.
  5. Add the cherry tomatoes. Season with salt and pepper. Cook for about 7-8 minutes, until the tomatoes are soft and jammy.
  6. Pour in the broth, lemon juice and lemon zest. Continue to simmer on low heat while you prepare the cod.
  7. In a separate pan, heat the olive oil over medium-high heat.
  8. Place the seasoned cod filets in the pan. Cook for about 3-4 minutes until a crust forms on the bottom.
  9. Gently flip the filets and cook for another few minutes, until the fish flakes easily and is fully-cooked.
  10. Transfer the cod to a serving platter.
  11. Stir fresh basil and parsley into the tomato sauce, reserving a little for garnish.
  12. Spoon the sauce over the cooked cod filets.
  13. Garnish with the remaining fresh herbs.
  14. Serve immediately and ENJOY!
