Description

This Cheesy Homemade Beefaroni is the ultimate comfort food. It’s perfect for a busy weeknight when you need a quick, satisfying meal that the whole family will enjoy.


Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1/2 cup minced onion
  • 2 garlic cloves, minced
  • 2 cups dried elbow macaroni
  • 2 cups beef stock
  • 1, 15-ounce can diced tomatoes
  • 3 tablespoons tomato paste
  • 8-ounces tomato sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley, for garnish

For the Spice Blend: 

  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes

Instructions

  1. Mix the spice blend together in a small bowl.
  2. Start browning the ground beef in a deep sauté pan. Sprinkle on the spices.
  3. Break apart the meat as it browns. Once almost fully cooked, add in the minced garlic and onions.
  4. Sauté for a few more minutes.
  5. Add the tomato paste and allow it to toast for a few minutes.
  6. Mix in the diced tomatoes and tomato sauce.
  7. Add the dried pasta and beef stock.
  8. Bring almost to a boil. Turn down the heat and simmered covered for about 10-12 minutes, stirring often to ensure the pasta is not sticking to the bottom.
  9. Stir in the fresh parsley.
  10. Top with the shredded cheese. Cover and allow the cheese to melt.
  11. ENJOY!

 

Notes

  • Substitute elbow macaroni with any short pasta.
  • Stir often to ensure the pasta is not sticking to the bottom.
  • Alternatively, melt the cheese under the broiler.
