Cheesy Homemade Beefaroni


Description

This Cheesy Homemade Beefaroni is the ultimate comfort food. It’s perfect for a busy weeknight when you need a quick, satisfying meal that the whole family will enjoy.


Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1/2 cup minced onion
  • 2 garlic cloves, minced
  • 2 cups elbow macaroni
  • 1, 15-ounce can diced tomatoes
  • 3 tablespoons tomato paste
  • 8-ounces tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp white cheddar cheese
  • 2 tablespoons fresh parsley, for garnish
  • 1/4 cup freshly grated Parmesan cheese, for garnish

For the Spice Blend: 

  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes

Instructions

  1. Mix the spice blend together in a small bowl.
  2. Start browning the ground beef in a deep sauté pan. Sprinkle on the spices.
  3. Break apart the meat as it browns. Once almost fully cooked, add in the minced garlic and onions.
  4. Sauté for a few more minutes.
  5. Add the tomato paste and allow it to toast for a few minutes.
  6. Mix in the diced tomatoes and tomato sauce. Simmer for at least 15 minutes.
  7. While the sauce is simmering, cook the elbow macaroni to al dente.
  8. Once simmered, fold in the cooked pasta and fully coat it in the sauce.
  9. Turn off the heat and gradually incorporate the shredded cheese to avoid clumping.
  10. Once the cheese is fully incorporated and melted, garnish with fresh parsley and Parmesan cheese.
  11. ENJOY!

 

Notes

  • Substitute elbow macaroni with any short pasta.
  • Allow the sauce to simmer for at least 15 minutes.
  • Cook the pasta just to al dente. It will finish cooking in the sauce.
  • Slowly incorporate the shredded cheese to avoid clumping.
