This Cheesy Homemade Beefaroni is the ultimate comfort food. It’s perfect for a busy weeknight when you need a quick, satisfying meal that the whole family will enjoy.

- 1 pound ground beef (80/20)
- 1/2 cup minced onion
- 2 garlic cloves, minced
- 2 cups dried elbow macaroni
- 2 cups beef stock
- 1, 15-ounce can diced tomatoes
- 3 tablespoons tomato paste
- 8-ounces tomato sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons fresh parsley, for garnish
For the Spice Blend:
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon crushed red pepper flakes
Instructions
- Mix the spice blend together in a small bowl.
- Start browning the ground beef in a deep sauté pan. Sprinkle on the spices.
- Break apart the meat as it browns. Once almost fully cooked, add in the minced garlic and onions.
- Sauté for a few more minutes.
- Add the tomato paste and allow it to toast for a few minutes.
- Mix in the diced tomatoes and tomato sauce.
- Add the dried pasta and beef stock.
- Bring almost to a boil. Turn down the heat and simmered covered for about 10-12 minutes, stirring often to ensure the pasta is not sticking to the bottom.
- Stir in the fresh parsley.
- Top with the shredded cheese. Cover and allow the cheese to melt.

- Substitute elbow macaroni with any short pasta.
