- 2 large, boneless chicken breast
- 3 to 4 Tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
FOR THE FILLING:
- 1 Cup diced broccoli
- 1/2 Cup cheddar cheese, shredded
- 5 ounces whipped cream cheese
- 2 Tablespoons Parmesan cheese, freshly grated
- 1 clove garlic, minced
- pinch of kosher salt
- pinch of black pepper
Instructions
- Preheat oven to 375°.
- Butterfly the chicken breasts using the technique mentioned above.
- Mix the seasonings in a small bowl.
- Rub the outside of the breasts with a touch of olive oil and the seasoning mixture.
- Combine the filling ingredients in a bowl.
- Stuff the chicken breasts with the filling.
- Secure the open ends of the chicken breasts with toothpicks (see video).
- Heat a few tablespoons of olive oil in a cast iron, or oven-safe pan.
- Sear the chicken on both sides.
- Bake for 25 to 30 minutes, or until cooked through.
