Ingredients

  • 2 large, boneless chicken breast
  • 3 to 4 Tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper

FOR THE FILLING

  • 1 Cup diced broccoli
  • 1/2 Cup cheddar cheese, shredded
  • 5 ounces whipped cream cheese
  • 2 Tablespoons Parmesan cheese, freshly grated
  • 1 clove garlic, minced 
  • pinch of kosher salt
  • pinch of black pepper

Instructions

  1. Preheat oven to 375°.
  2. Butterfly the chicken breasts using the technique mentioned above.
  3. Mix the seasonings in a small bowl.
  4. Rub the outside of the breasts with a touch of olive oil and the seasoning mixture. 
  5. Combine the filling ingredients in a bowl. 
  6. Stuff the chicken breasts with the filling.
  7. Secure the open ends of the chicken breasts with toothpicks (see video).
  8. Heat a few tablespoons of olive oil in a cast iron, or oven-safe pan.
  9. Sear the chicken on both sides. 
  10. Bake for 25 to 30 minutes, or until cooked through.
