- 4 tablespoons butter
- 1/4 white or yellow onion, minced
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 1/4 cups chicken stock
- 2 1/4 cups heavy whipping cream
- 5 cups frozen broccoli, chopped
- 1/4 cup carrot matchsticks
- 3–4 cups shredded cheddar cheese
- Cracked black pepper, for garnish
Instructions
- Melt the butter in a deep pot over medium heat.
- Add the minced onion, salt, and black pepper. Sauté for a few minutes until softened.
- Sprinkle in the flour and cook for 2–3 minutes to remove the raw flour taste.
- Slowly pour in the chicken stock and heavy cream, whisking constantly to smooth out any lumps.
- Add the broccoli and carrot matchsticks. Bring the soup just to a boil.
- Reduce the heat. Cover and simmer for about 20 minutes, until the broccoli is tender.
- Lower the heat. Slowly incorporate the shredded cheddar cheese a little at a time, stirring constantly until melted and smooth.
- Serve warm and garnish with cracked black pepper.

Notes
- Always shred your own cheese from a block for the smoothest soup texture. Pre-shredded cheese contains anti-caking agents that can affect melting.
- Add the cheese off heat or over very low heat to prevent graininess.
- If you prefer a smoother soup, use an immersion blender to blend part of the soup before adding the cheese.
