Description

This Baked Cabbage Parmesan recipe is a flavorful, cheesy dish that’s easy to make, low-carb, and utterly satisfying.

Ingredients

Scale
  • 1 medium-to-large head green cabbage
  • 12 ounces hot Italian sausage
  • 3 garlic cloves, minced
  • 1 15-ounce can diced tomatoes
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 2 tablespoons olive oil, plus more for drizzling
  • 6 torn fresh basil leaves, plus more for garnish
  • 6 ounces mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, freshly grated

Instructions

  1. Start browning the hot Italian sausage in a pan over medium heat. Break apart as it is browning.
  2. While the sausage is browning, remove the outer layers of the cabbage and slice it into one-inch thick steaks, keeping the core intact.
  3. Once the sausage is fully cooked, add the minced garlic and cook for another minute.
  4. Stir in the diced tomatoes. Season with 1/4 teaspoon of salt and crushed red pepper flakes. Simmer on low.
  5. Preheat the oven to 400°F (200°C).
  6. Brush both sides of the cabbage steaks with olive oil and season with salt and pepper.
  7. Heat a cast iron or non-stick pan to medium-high and sear the cabbage steaks on both sides until golden brown.
  8. Place the seared cabbage steaks onto a baking pan.
  9. Top each cabbage steak with the sausage tomato sauce (use all of the sauce).
  10. Sprinkle Parmesan cheese on top, followed by shredded mozzarella.
  11. Bake uncovered for 15-20 minutes.
  12. Broil for 2-3 minutes at the end to brown the cheese.
  13. Serve drizzled with a touch of olive oil and garnished with fresh torn basil.
  14. ENJOY!

Notes

  • Remove the outer leaves of the cabbage.
  • You should be able to get four cabbage steaks from a medium to large head.
  • Keep the core on the cabbage as you slice. This will help to keep the leaves in tact.
  • Some outer cabbage leaves may fall off while searing. Easily, rearrange them around the cabbage in the baking pan.
  • For the sausage, use three links with the casings removed, or the equivalent in ground.
  • Easily replace the hot Italian sausage with ground beef, ground chicken, ground turkey, or a meat alternative.
  • For a vegetarian version of this Cabbage Parmesan, use a tomato-based sauce.
