CHEESEBURGER HAMBURGER HELPER

Ingredients

  • 1 1/2 lb. ground beef (80/20)
  • 3/4 lb. DeCecco Cavatappi or elbow macaroni
  • 2 TBLS flour
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 1/2 TBLS paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 C chicken broth
  • 1 C heavy whipping cream or whole milk
  • 1/2 C pasta water
  • 1 mini-block velveeta cheese (4 oz.)
  • 1 1/2 C shredded cheddar cheese

As I continue my journey recreating foods from the past…how could I not include Hamburger Helper…this was not something my Mom made often…as kids we always thought it was a treat…really? No BOX here…all homemade from beginning to end…and you and your Family are going to love it! Dinner is done in just about 25 minutes or less!

Homemade Cheeseburger Hamburger Helper in a cast iron pan

Start boiling water for the pasta. Heat up a cast iron pan to medium and add in the ground beef. Allow the beef to cook through. Drop pasta into boiling salted water as the beef is browning.

Sprinkle the flour on the beef and stir to coat. Add in the onion powder, garlic powder, paprika, salt and pepper. Allow to cook for a minute or so just to cook out the raw flour taste.

Turn up the heat just a bit. Stir in the chicken broth, heavy whipping cream and pasta water. The mixture will start to thicken. Allow to cook for just a few minutes. Remove from heat. Add in the Velveeta cheese in pieces. Stir to melt. Slowly add in one cup of the shredded cheese and combine until it is melted.

Place pan back on a low burner. Transfer the pasta directly from the pot to the pan with a slotted spoon…it is very ok if some of the pasta water transfers. Toss to coat the pasta. Taste. Add in the remaining half cup of shredded cheese…toss to melt. Mine was perfect at this point, but if the sauce is too thick…add in a touch more cream. ENJOY!
