Surf and Turf
What better way to enjoy Valentine’s Day or any day for that matter than with a Surf and Turf dinner you can make at home! It’s super easy and so delicious…add in a bottle of wine and an amazing dessert and you are good to go.
If you are local to Charlotte, head on over to The Carolina Meat & Fish Co. and take advantage of their Valentine’s Day deal…two lobster tails and two 7 oz. Meats by Linz filets for less than $44 total! This is what you dinner will look like!
What you need:
- 2 7 to 10 oz. filets
- 2 lobster tails
- 1 stick butter (sliced into pats)
- olive oil
- kosher salt/pepper
- 8 to 10 whole garlic cloves
- fresh herbs (I love using thyme and rosemary)
- fresh chopped parsley
- lemon wedges
Not in the mood to sous vide, for the filets, simply heat up a cast iron pan to medium/medium-high. Be sure to allow your meat to come to room temperature before cooking. Rub the filets with a touch of olive oil. Season with kosher salt and pepper. Place in cast iron pan with about 4 to 6 pats of butter, the whole garlic cloves and the fresh rosemary and thyme.
Allow the steak to sear and form a perfect crust on one side. Flip and do the same for the other side. You will notice the garlic will brown and the herbs will give off an amazing aroma. I usually cook mine for about 4 minutes a side…I like mine rare plus to medium rare.
If you wish for your steak to cook to a medium to well…place a lid after the first flip and allow to cook a few minutes longer.
Add another pat of butter and fresh chopped parsley to each filet to finish. Place on plate along side the finished lobster tail and allow to rest for a few minutes! ENJOY!
