Here is my take on a healthier version…well…maybe not super healthy…but a healthier version of mashed potatoes. My Mashed Cauliflower is super tasty and so easy to make. Your family with love the flavor and it will surely become one of your new favorite side dishes! I served mine with cast iron seared chicken breasts coated with JD’s Rub.
What you need:
- 2 heads of cauliflower (cut into florets)
- 1 carton chicken broth
- 8 oz. block of white cheddar cheese (grated)
- 1/2 cup Parmesan cheese
- 1/2 heavy whipping cream
- 2 TBLS butter
Add broth and cauliflower to pot and bring to just under a boil. Season with salt. Allow to cook for just about 8 to 10 minutes to soften. Drain and add cauliflower back to pot. Add cheddar cheese, whipping cream, Parmesan cheese and butter to pot. Mash with a hand mixer. Season with salt and pepper.
