Guacamole

I have been trying to eat an avocado a day…so today, I decided to have my avocado as Guacamole! Super fresh ingredients make all the difference and my addition of just a touch of sour cream makes it so fluffy!

There are so many health benefits to eating avocados…for me I am trying to lower my A1c…so with increased cardio and adding an avocado a day…I’m hoping that in three months…I will!

You want to be sure that your avocados are ripe for this recipe…you can place in a paper bag overnight if you need to hurry up the ripening!

You can use this guacamole as a dip…in your tacos…on top of your burger…the possibilities are endless!

Guacamole

What you need:

  • 4 ripe avocados (I used one large and three small)
  • 1 clove garlic, minced
  • 2 TBLS red onion, minced
  • 1 plum tomato, chopped in tiny pieces
  • Juice of one lime
  • 2 TBSL fresh chopped cilantro
  • kosher salt/pepper
  • few dashes of Tabasco
  • 2 small dollops light sour cream
  • jalapeno, diced (optional)

How to:

Halve the avocados and spoon out the insides in a bowl. Mash with a fork. Season with salt/pepper.

Add in the tomato, red onion, garlic, Tabasco, and cilantro.

Add in the sour cream and lime juice.

Gently mix all of the ingredients. Taste. You may need to add a touch more lime juice and/or kosher salt. Serve immediately or cover with plastic wrap and place in fridge! ENJOY! Love my serving bowl? Click here to get one similar from Arte Legno!
