Faroe Island Salmon with Lobster Cream

- 2 6 to 8 oz. pieces of Faroe Island Salmon (Scottish Salmon)
- 1 Clove Finely Choppe Garlic
- 4 oz. Cooked Lobster Meat
- 1 1/4 Cup Heavy Whipping Cream
- 1 to 2 TBLS Old Bay Seasoning
- Chopped Fresh Parsley
- Olive Oil
Heat a cast iron pan to medium-high. Rub salmon with a touch of olive oil, salt and pepper. Place salmon skin side down in the pan and allow to sear. As the salmon is searing, heat the heavy whipping cream, garlic and Old Bay in a saucepan on medium for about 5 to 8 minutes…allow to thicken…add the lobster meat and fresh parsley to the saucepan and continue thickening for another 5 minutes. Sear the opposite side of the salmon to a crispy brown. For this recipe, I prepared Jasmine rice with a side of sauteed spinach. You can substitute the rice with your favorite pasta and/or vegetable of your liking. To serve, place seared salmon on top of prepared rice, pour lobster cream sauce over salmon and garnish with additional fresh parsley. ENJOY!!!
