It was an early morning, but it was a fabulous morning as I was able to join Jim, once again, from The Carolina Fish Market as he introduced his new meat market, The Chop Shop which is located inside the fish market. As an introduction to the Chop Shop, Jim prepared braised short ribs with local, gourmet sauces he carries in the market. I prepared my infamous Pan Seared Scallops which I laid on top of a bed of fresh-made linguine from Pasta & Provisions.
